(Olive trees have peak production once every 2 years). The trees are still developing. The Extra Virgin Olive Oil (EVOO) is processed by Dianna Olive Oil of Willunga and they have purchased most of the Extra Virgin Olive Oil each year. This year’s oil was classified as ‘very good EVOO’. Picking can be by hand, however the crop included machine harvesting last year. The best and most efficient approach has been found to be hand picking using a picking team using two backpack battery ‘shakers’.
